Appe or Paddu is the south indian dish made by steaming batter in a special mould called Appe pan. The batter can be of fermented Rice flour and lentils like we prepare batter for Idli and dosa or batter can be of Semolina/ Suji and curd.

Paddu can be spicy ,sour or sweet in taste. In South India Appe is also called Paniyaram, Guliyappa, Yeriyappa. Appe is made on a special pan having 7-12 round mould in it. These circular molds can be big or small. Appe is the dish which is quite popular in Tamil Nadu, Karnataka, Andhra Pradesh regions, but due to its taste and easy to make properties appe becomes famous across all over India. These Appe can be prepared in less time and with less effort as compared to many other south indian delicacies.

There is one more version of Appe that is Suji Appe which is prepared instantly. Mixed vegetable appe is the dish that can be prepared with the suji mixture or with the fermented rice lentil mixture. In the same way Stuffed appe can be prepared with suji curd mixture or fermented rice lentil mixture. In the Stuffed Suji Appe recipe, spicy potato mixture is stuffed inside the Semolina batter. It is usually served with coconut chutney or peanuts chutney.

Many People like to eat sweet versions of Appe. In this they add powdered jaggery in the Appe batter. Few days before writing this blog I tried one more version of appe in which I stuffed sweet roasted khoya, coconut and chopped dry fruit mixture inside the suji curd mixture. It turns out so delicious that everyone in my family loved to eat this.

Ingredients
  • 1 cup Semolina/ Sooji
  • 1 cup Dahi/ Yoghurt
  • 1 cup Mashed boiled Potatoes
  • 1 tsp Cumin seeds/ Jeera
  • 1tsp Mustard Seeds
  • ¼ tsp Turmeric Powder
  • ¼ tsp Red Chili Powder
  • 8-10 fresh Curry leaves/ Kadi patta
  • 2 chopped Green Chillies
  • 1 tsp grated ginger
  • ⅓ cup Chopped Onions
  • ¼ cup Chopped Tomatoes
  • ¼ cup Green peas
  • 1.5 tsp Oil
  • salt to taste
  • big pinch of Eno
  • chopped coriander leaves
Recipe Steps
  1. Take a mixing bowl. Add semolina in a mixing bowl. Then add curd in the mixing bowl. Mix well. Add salt in the mixture and mix it well. Keep the Suji mixture covered and put it aside.
  2. Add 1.5 tbsp oil in a kadhai. Then add cumin seeds, mustard seeds, curry leaves in the oil. When these ingredients start to sputter then add chopped chillies, grated ginger in the oil. Cook this for 1 minutes then add chopped onions in the oil. Saute the chopped onions till its color changes to translucent pink and the raw smell of onions gets removed. Now add chopped Tomatoes and green peas in the kadhai.Mix well. Cook this for 3-4 minutes on low flame with the lid covered.Now add one cup mashed potatoes, turmeric powder, red chili powder, salt to taste in the kadhai. Mix it well. Cook or Bhuno this mixture for 4-5 minutes on low to medium flame. in the last add chopped coriander leaves. Mix well. Transfer the mixture in a bowl and keep it aside.Potato mixture is ready. This is the stuffing of stuffed suji appam.
  3. Add a big pinch of eno in the suji mixture. Mix It well.( Add eno in the suji mixture just 10 minutes before making appe in appe pan.
  4. Now Suji mixture and Potato mixture is ready.
  5. Take an appe pan and brush oil in each mould of appe pan. Pour a little suji mixture in the mould and add potato mixture on it. Cover this potato mixture with the same suji mixture. Repeat the same process for each mould. Sprinkle some oil around each corner of the mould. Cover the lid of appe pan and cook it on low to medium flame. After 2-3 minutes flip each stuffed appe and cook it from the other side. After 3-4 minutes, crisp stuffed suji appe is ready.
  6. Serve hot stuffed apple with peanut chutney or coconut chutney.
